Oven Roasted Sunflower Kernels - Servings: 1 cup
Ingredients
1 cup raw sunflower kernels
Directions: Preheat oven to 400 degrees. Evenly spread 1 cup of raw sunflower kernels over a jelly roll pan or large roasting pan. Bake for 5 minutes or until lightly browned. Let cool and store in airtight container. May be frozen for up to 1 year.
Artichoke Sunflower Dip - 22 servings of 3 tablespoons
Great party fare served with baked chips or crackers and yet hearty enough for a pita sandwich filling.
Ingredients
1-15 ounce can cannelloni or other white beans, rinsed and drained
2-3 garlic cloves
1-15 ounce can artichoke hearts, drained and chopped
1/3 cup reduced fat mayonnaise
1-2 ounce jar diced pimentos
¼ teaspoon salt
juice of one lemon or lime
4 ounces feta cheese, crumbled
½ cup roasted and salted sunflower kernels
Directions: Puree beans and garlic in a food processor; empty into a mixing bowl. Stir in artichoke hearts, mayonnaise, pimentos, salt and lemon juice. Turn into a Pyrex pie pan and sprinkle with cheese and sunflower kernels.
Broil 4-6 inches from heat for 5-7 minutes, until bubbly and golden brown. Serve warm with crackers, pita or toasted bread.

Sunflower Cheese Balls
Ingredients
4 ounces Muenster cheese, room temperature
4 ounces cream cheese, room temperature
1/2 teaspoon Worcestershire sauce
1/4 teaspoon paprika
1/8 teaspoon red pepper
2/3 cup roasted, salted sunflower kernels
Directions Combine cheeses, blend thoroughly. (Use food processor, if possible.) Add Worcestershire sauce, paprika, and red pepper; blend. Refrigerate at least 30 minutes. Roll in sunflower kernels immediately. Refrigerate cheese balls 2 hours. Serve with whole-grain crackers, bread sticks or miniature bread slices. Makes 25 cheese balls .
Flax and Sunflower Seed Bread - Servings: 15
This is a great bread for seed lovers, one of the tastiest I've tried.
Ingredients
1 1/3 cups water
2 tablespoons butter, softened
3 tablespoons honey
1 1/2 cups bread flour
1 1/3 cups whole wheat bread flour
1 teaspoon salt
1 teaspoon active dry yeast
1/2 cup flax seeds
1/2 cup sunflower seeds
Directions
Place all ingredients (except sunflower seeds) in the pan of the bread machine in the order recommended by the manufacturer. Select basic white cycle; press start. Add the sunflower seeds when the alert sounds during the knead cycle.

Ingredients
2 green apples - washed, cored and cubed
1/2 cup sunflower seeds
1 head romaine lettuce - rinsed, dried, and chopped
2 dill pickles, diced
2 tomatoes, diced
1/2 cup ranch-style salad dressing
Directions:
In a large bowl, mix together the apples, sunflower seeds, lettuce, pickles and tomato. Pour dressing on top, toss and enjoy!

2 cups cubed cooked chicken breast meat
1 cup cubed Cheddar cheese
1/4 cup sunflower seeds
1/4 cup thinly sliced celery
1/2 cup seedless green grapes, halved
1/2 cup mayonnaise
salt and pepper to taste
Directions:
In a large bowl combine the chicken, cheese, sunflower seeds, celery, grapes, mayonnaise and salt and pepper to taste. Mix all together and serve on rolls or lettuce leaves, if desired.
