If you need a little espresso pick me up but don`t have time to run to the nearest coffee shop, make a batch of these at home and take them with you to work. It only takes about 20 minutes to make this treat and the recipe yields approximately 4 cups.
Non-stick vegetable oil
1 cup sugar
3 tbsp. finely ground espresso coffee beans
1 1/2 tbsp. instant espresso powder
1 tsp. ground cinnamon
1/2 tsp. coarse kosher salt
1 large egg white
4 cups walnut halves
Preheat oven to 325 degrees Fahrenheit. Spray a large-rimmed baking sheet with non-stick vegetable oil spray.
Place sugar, coffee beans, espresso powder and cinnamon in a small bowl. Stir until combined.
Place the egg white in a large bowl and whisk until frothy. Add the walnuts to the egg white and toss to coat.
Sprinkle coated walnuts with your sugar and espresso mixture. Toss to coat.
Spread walnuts on the prepared cookie sheet in a single layer. Bake for 5 minutes.
Gently stir the walnuts with a spatula to turn. Bake for 5 minutes, or until the walnuts are dry to the touch.
Take walnuts out of the oven and allow them to cool before handling. Store walnuts in an airtight container at room temperature. These pick-me-up espresso treats last for about two weeks.
